Our second (!) Wismer-Foxcroft is 100% Destemmed! We decided to try this technique after years of using 30-34% whole clusters, while at the same time also experimenting with 52% W.C. The 52% experiment had more fruit and lusciousness, but also more of an ascorbic acid finish and less true stony terroir on the finale. With this in mind, we tried a new experiment to see how technique influences terroir: this 100% destemmed version is incredible, and tugs my heartstrings because it has so much drag on the finish. With so much weight and salinity, it's indescribable. I'm sure this is going to improve for 5 to 10 years — and maybe even hold for 15! We really didn't need another wine, but we did need to know what would happen if we destemmed Foxcroft! Same exact winemaking, same exact barrels but here we have a wine with more lightness and elegance. Notre deuxième (!) Wismer-Foxcroft est 100% éraflée ! Après plusieurs années en faisant 30-34 % de grappes entières, avec en tandem, des essais avec 52 % de grappes entières. Le 52 % offrait plus de fruit et de gourmandise, mais aussi une finale plus acide et moins de terroir pierreux. Alors, nous voulions faire une nouvelle expérience pour voir comment la technique influence le terroir : l'égrappage à 100 %. Ce vin est incroyable et me touche profondément car il a une finale très persistante. Avec autant de mache et de salinité, je suis sûr qu'il va s’améliorer pour 5 à 10 ans, et peut-être même bien durer 15 ans ! Nous n'avions pas vraiment besoin d'un autre vin, mais nous devions savoir ce qui se passerait si nous égrappions le Foxcroft ! Même vinification, mêmes fûts, mais ici, nous avons un vin plus léger et plus élégant. Le mot de Mary : Wismer-Foxcroft « light » — une version plus serrée et plus élégante que la version ‘32% Grappes entières.’
